Okra are bright green, slender pods that add versatility and nutrition to many dishes. The pods are tapered at one end with a cap on the other end. Inside, the white flesh and tender white seeds offer a mild, zucchini-like flavour and unique texture. Okra can be eaten raw, marinated in salads, deep fried or used in soups and stews. When cut and cooked, okra releases a gelatinous substance that is virtually flavourless and wonderful to use as a thickening agent.
